Macelleria President Violetta Bitici, along with the restaurant’s butcher, will teach you the time honored culinary tradition that is the backbone of this famed establishment. During this hands-on class, you will learn how to debone a small chicken or hen, how to cut a perfect lamb chop and the knife skills it takes to learn how to master simple home butchery. The class will finish with a taste of some of the meats you have butchered, served with perfectly paired wines from Southern Wine & Spirits of New York.
