When Gallic-born Gautier and Ashley Coiffard moved to New York City, they had a big problem: they couldn’t find any high-quality French bread. So they decided to make some themselves. They began selling it out of their Brooklyn apartment, which was in 4F. And it became a pandemic-era sensation. So much so, in Spring 2022, they opened their own brick-and-mortar bakery in Brooklyn Heights. Interest and appetite in their Gallic-accented baked goods and bread has not slowed down.
