A few years ago husband and wife Diana and Zack Wangeman, both Mexican pastry chefs in New York City, had a problem: when they searched for authentic high-quality tortillas in NYC, they came up empty handed. So, like great chefs do, they took a very deep dive into the history and production of tortillas and made these scrumptious corn disks themselves. The results ended up being Sobre Masa Tortilleria in Brooklyn where the couple imports more than a dozen varieties of heirloom corn for what has become the best tortillas this side of the southern border.
