What is your favorite NYC restaurant? And what is your go-to dish? Bep Ga, a hole in the wall in Chinatown. They only do Chicken. My go to dish is Chicken Pho, so simple and fresh and they have an incredible hot sauce. What is your ultimate meal? Traditional Japanese Breakfast (grilled fish, rice, pickled vegetables and fermented soybean). The best one I ever had was in this little village near a hot spring in Northern Japan. What three things are always in your pantry? Rice (Short grain Japanese rise Koshihikari or Long Grain Basmati), natto, and fresh lemons. If you weren't a chef, what would you be? A painter or photographer. If you could cook with anyone, who would that be? My grandma!
