Biography

Anthony Serignese started working in the food and beverage industry at the age of fifteen washing dishes. By twenty one, he had worked for famed restaurateur Keith McNally’s Balthazar, and been certified as a sommelier. Anthony continued to work for and learn from some of the cities most well-known restaurateurs including Jean George and Mario Batali before beginning his management career operating Pop Burger, one of the pioneering nightlife establishments in the Meatpacking District. Anthony Serignese started working in the food and beverage industry at the age of fifteen washing dishes. By twenty one, he had worked for famed restaurateur Keith McNally’s Balthazar, and been certified as a sommelier. Anthony continued to work for and learn from some of the cities most well-known restaurateurs including Jean George and Mario Batali before beginning his management career operating Pop Burger, one of the pioneering nightlife establishments in the Meatpacking District. At Pop Burger he focused on cultivating excellent service and packed the house with a guest list of A-list celebrities including Brad Pitt. From there he went on to run a few smaller restaurants building strong relationships within the industry until he landed at The Stanton Social in 2007. There he built a young, budding, on trend restaurant into a thriving business with a strong following from many world famous actors and musicians including Madonna, Matt Damon, Sofia Vergara, Sam Smith and John Mayer just to name a few. Anthony represented The Stanton Social in many on air press spots including The Best Thing I Ever Ate and Live Well with Ali on ABC. In 2010 he helped with the opening of Beauty & Essex. After this, Anthony opened Joe’s bar in Manhattan. Joe’s is a cocktail bar that specializes in bringing quality Americana, nostalgia, excellent burgers, craft American beers and great cocktails both original and classic to the Upper West Side. Most recently he opened The Springs bar and lounge in Greenpoint Brooklyn, a Palm Springs inspired large indoor out door space.

The sloppy Joseph

Recipe Ingredients:

Ground chuck
White onion
Red, orange and yellow bell peppers
Brown sugar
Red wine vinegar
Worcestershire sauce
Montreal steak seasoning
Marinara

Recipe Instructions:

Brown chuck in a sauté pan. Be sure to vary size of meat chunks. Once all the proteins have tightened put them in a large stock pot. Glaze meat with brown sugar. Once sugar has been fully melted add steak seasoning and stir being sure to full spread the seasoning. Sweat the white onions till translucent. Add sweated onions and brunoise of peppers to the meat mixture. Add all other wet ingredients. Cook until peppers are tender and an orange sheen is at the top of the boil. Take it off the heat and skim off fat till you can mostly see ground chuck. Serve on toasted brioche buns with sliced raw red onion and sandwich sliced sour pickles.
