Ben originally went to school to be a philosophy professor. After getting a degree in philosophy and ancient history he felt the pull of the kitchen and went to culinary school at CIA. Moving to NYC after school he worked his way up in the dining room of a classic NYC seafood restaurant Oceana learning service from the Managing Partner Paul McLaughlin. After spending years as a Captain there Ben made the transition to manager leaving as Service Director. He went to work at FCI in SOHO managing their restaurant on campus L’Ecole. Ben went to Brooklyn to help manage and grow the service of a new cocktail and oyster bar in Williamsburg called Maison Premiere. He has been the Service Director and General Manager there for 13 years and is one of the leaders that saw them through 2 finals and an eventual win of the First James Beard Award ever in Brooklyn. You can find him most nights in the dining room sharing what he loves with staff and guests alike.
