Prior to helping open Motel Morris, Chef Bill was the executive chef at The Mermaid Inn Amsterdam location for 4 years. Before that he held down the fort at Red Cat Cafe for 14 years. Upon arriving in New York City, Chef Bill developed his culinary skills in the kitchens of the River Cafe and under Gerry Hayden at Marguery Grill.

Although this is his first year participating in NYCWFF, Chef Bill has previously enjoyed the pleasure of cooking for the South Beach Wine & Food Festival!
