Billy Pappas is a graduate of The Culinary Institute of America class of ’97. After graduating he went on to work at The Waldorf Astoria Hotel in NYC. He started working in the banquet department. From there he went on to work with Chef Laurent Gras at Peacock Alley which gained a coveted 3 stars from The New York Times. His next position was head saucier at The Waldorf Astoria where he prepared all sauces, soups, braised items etc. for all banquets as well all of the restaurant outlets in the hotel. Next he was promoted to chef of Room Service and then on to head banquet chef. His next move was taking the executive sous chef position and eventually being promoted to executive chef with Cipriani at The Rainbow Room. After several years he felt it was time to go out on his own and went on to open Crave Astoria. After 3 successful years he decided to open another location The Shady Lady and 12 years later the restaurants are still thriving.
