Carolina Saavedra is a traditional indigenous chef from Oaxaca, Mexico. Carolina’s culinary expertise is rooted in her family’s Mixtec tribe traditional recipes which includes native ingredients such as corn, squash, and beans. Her dishes also include notes from modern Caribbean, Arabic, French, Indian, and Italian flavors, all influenced by her upbringing in New York City’s diverse communities. Carolina is a fierce advocate of indigenous and immigrants’ rights, and is actively involved in anti-gentrification efforts in the South Bronx.

What is your favorite NYC restaurant? And what is your go-to dish? I love corn on the cob and prefer to purchase it from a street vendor any day over a restaurant. What is your ultimate meal? My ultimate meal is a Tlayuda. A Tlayuda is a big homemade tortilla top with beans, proteins, cheese and vegetables. It reminds me of growing up in NYC and eating pizza. What three things are always in your pantry? Corn, beans, and avocados. If you weren't a chef, what would you be? I would have finished my premed studies and eventually become a pediatrician. If you could cook with anyone, who would that be? Aaron Sanchez What’s your favorite NYCWFF memory? My favorite moment on any fundraising event is finding out that fundraising goal and mission was achieved.

Guacamole
Recipe Ingredients:
1 whole Avocado
1/2 of a lime
2 Tbsp of cilantro
2 Tbsp of onions
2 Tbsp of tomatoes
1 tsp jalapeno
Salt
Recipe Instructions:
-Finely chop onion, jalapeno, cilantro, and tomatoes place all these together in a bowl and set it aside.
-in a medium size bowl, peel avocado, squeeze half of a lime for its juice and mash it together
-place finely chopped onion, jalapeno, cilantro, and tomatoes into the bowl with the mash avocado
-stir everything together and season it with salt to taste.
