Colin’s interest in the culinary arts began with his Mom’s specialty feasts she would prepare for special occasions. Whenever his mom was cooking, you can be sure many people were going to gather. M Star Cafe located in Chinatown on Division St. Their "Dai Pai Dong Cheung Fun" (Hong Kong style rice noodles with peanut and hoisin sauce) brings back childhood memories of visiting Hong Kong every summer. What is your ultimate meal? Hainanese Chicken Rice Feast made by mom-- includes Chinese mushroom stewed for hours in oyster sauce, steamed fish in sweet soy sauce, and an assortment of vegetables and sides. The star of the meal is of course the slow-poached whole chicken with silken skin alongside flavorful garlic-chicken rice cooked using the chicken broth. What three things are always in your pantry?
