Koketsu began his culinary career at Stars in Palo Alto, California working with renowned chefs Jeremiah Tower and Joyce Goldstein. Koketsu realized that a move to New York City was crucial to work with the chefs he admired.

Once in New York, Koketsu landed the position of chef de partie with Gray Kunz at the famed restaurant Lespinasse. The young chef was afforded the opportunity to work with another remarkable talent, Christian Delouvrier, who replaced Kunz after his departure from Lespinasse. Koketsu stayed on Delouvrier’s new team and became poissonnier, which was the post he held when Lespinasse earned a four-star review from the New York Times. Koketsu was then honored with the highest position in Delouvrier’s kitchen, chef de cuisine.

Koketsu was selected to create the culinary concept and menus of Quality Meats, which he executed with a great respect for classic dishes which were transformed by his creativity. Koketsu created the culinary direction of Quality Branded’s award-winning Park Avenue Summer (Autumn, Winter, Spring), Quality Italian, Quality Eats and Quality Meats. New York Magazine and Esquire Magazine have named Koketsu among New York’s top up-and-coming chefs.

Quality Eats’ Grilled Nueske’s Bacon
Serves 4

Ingredients:

4 slices thick cut Nueske’s Bacon
1 apple diced small
1/2 jalapeño minced

For jelly:
4 jalapeños
12 oz cider vinegar
12 oz sugar
2 tbsp pectin
1 tbsp sugar
1 to drops green food coloring

For the butterscotch:
1 cup butter
1 cup cream
2 cups sugar
2 tbsp miso
1 pint peanuts

Directions:

In a blender, blend whole peppers with sugar, vinegar strain. Bring liquid to boil in pan, add food coloring, pectin, remaining tbsp sugar and cool.

Bring butter, sugar and half of cream to boil until light caramel forms. Take off heat, whisk in cream and cool.

Purée/blend peanuts in food processor until texture of chunky peanut butter. Fold into butterscotch.

To finish, grill or sear bacon until rendered and slightly charred.

Mix the minced jalapeño and apple with 4 tbs of jelly. To plate, place a dollop of peanut butter butterscotch on the plate and flatten with spoon. Top with bacon then a nice spoonful of jelly. Serve immediately!
