Eder grew up in Bilbao, pursued his formal cooking training in San Sebastian, and spent his early professional years with Mediterranean flavors in Catalunya. He came to New York as the Sous Chef of Meigas where he and his wife, Alex Raij, met and cooked together. Eder went on to become the Sous Chef of Nobu before opening a collection of critically acclaimed Spanish restaurants with Alex.

Eder’s restaurants have been celebrated extensively by The New York Times, New York Magazine, Food and Wine, Bon Appétit, Time Out, Lucky Peach, Eater, and many more.
