Fabian Nigito, a native to Argentina moved to the United States in 1990 looking for a better opportunity. After searching for a job he came across a restaurant. Being new to the country, naturally he was nervous, but yet determined. Luckily, he was able to snag a dishwashing position. Fabian Nigito, a native to Argentina moved to the United States in 1990 looking for a better opportunity. After searching for a job he came across a restaurant. Being new to the country, naturally he was nervous, but yet determined. Luckily, he was able to snag a dishwashing position. After 3 months, Fabian realized dishwashing wasn’t for him and he wanted more. He needed more. He approached the chef and asked if he could learn the food preparation part of the business. The chef gave him an opportunity, and Fabian worked behind the line. Climbing up the ladder, he did every job in the kitchen there is. He was a line cook, a sous chef, and broiler crafter. By 1997, Fabian was the lead sous chef in both locations owned by the same restaurant. He had trained many inspiring cooks and turned them into chefs. In the year 2000, Fabian had become Executive Chef in the nation’s 2nd busiest restaurant, in the heart of NYC. After 10 years of his role, the company started to make changes. Fabian knew he had to move forward with his career and find a new platform. Throughout his time in the restaurant business he met and befriended Greg Fosdal who then owned a large ice cream corporation. When Greg approached him about his new BBQ restaurant concept, Fabian wanted to be a part of it. He jumped right in and on board as DaddyO’s BBQ and Sports Bar Executive Chef. In 2011, Staten Island’s only smoke house came to life, and Fabian was the man behind the kitchen doors. This position was perfect for him because BBQ is his favorite type of food to make. Fabian is smart, creative, and a master in the kitchen. His passion for food only grows day by day. He has fulfilled and lived his American dream.
