Spending summers in Ecuador, Galo was regularly getting caught eating the eggs off his grandfathers breakfast plate when he wasn’t looking, Grandma made sure she taught him how to make them. Then later in his childhood he then hit the charcoal grill making meals for the family. His passion for food grew watching Yan can cook, Julia Child and Chef Jacques Pepin among other TV chef personalities at the time. Exposing himself to the variety of cuisines available growing up just outside of NYC he has developed a style of cooking rooted in latin flavors with world influences.

A few years back he found himself in between jobs and decided to take this passion for food and open one of NJ’s 1st Empanada Specialty stores Empanada Mania. It is now one of the highest rated empanada brands in the NYC tristate area.
