Harvey started out in this industry at a very early age. He was often brought into the family restaurant & was given small tasks to keep him busy. Oftentimes he would be filling to-go sauce containers or helping package to-go items. Growing up in the family restaurant he developed the passion & the skills needed for all front of house positions. This enabled him to be part of the opening teams of nearly a dozen restaurants throughout the city & in Hawaii for notable chefs & restaurateurs.

Having worked & managed restaurants throughout the city for others he was gradually conceptualizing his own restaurant vision. When all the right pieces fell into place he was ready to add Ama Raw Bar to New York City’s vibrant dining scene. Tasting & learning about all the various flavors & ingredients throughout his career he realized that his true calling in the restaurant industry was in the kitchen. Thus he stepped into the chefs roll to get his own restaurant off the ground & ensure his menu was executed properly.
