Helen Jo is Pastry Chef of Le Pigeon, the bustling East Burnside Street restaurant in Portland, Oregon that challenges the notion of classic French cuisine by juxtaposing uniquely prepared ingredients in unparalleled, clever execution by two-time James Beard Award winning chef Gabriel Rucker. Jo puts a whimsical spin on seasonally inspired desserts that stand up to Rucker’s celebrated menu of edgy, highly original, and recipe-free masterpieces at Le Pigeon; often incorporating unexpected savory and salty flavors to balance the sweetness. Jo grew up in Chicago, and with a dad who worked with Asian Grocery stores, she was exposed to diverse cuisine and flavors from a young age. In 2005, Jo moved to New York City to pursue a culinary career, starting at a chocolate boutique and later honing her skills on the pastry teams of Eleven Madison Park and Del Posto, then helping to open the now-famed Momofuku Milk Bar where she worked for five years before moving to Portland in 2013. In 2014, Jo was brought on by Little Bird Bistro pastry chef Lauren Fortgang to be her successor, moving on to Le Pigeon to assume the role of Pastry Chef in 2016. In her free time, Jo enjoys spending time outside running, playing soccer, and learning to skateboard.
