Zamora hails from California’s Salinas Valley, the agricultural heartland of the state, where he
learned about the value and appeal of simple, fresh ingredients. After completing studies at San
Francisco’s California Culinary Academy, he worked his way through the region’s venerable
kitchens including Aqua, The French Laundry and Quince before taking the helm at Madera in
Silicon Valley that was awarded a Michelin Star during his tenure. A move to New York City
included a stint at 432 Park Avenue before he was tapped to join the opening team at Legacy
Records as Chef de Cuisine. Tacos Güey is Zamora’s first foray into cooking Mexican food
professionally where he combines his fine dining pedigree and Mexican-American upbringing to
enrich a menu focused on bold, nuanced flavors. Dishes like Pork Ribs En Salsa Verde with
grilled avocado and flour tortillas evoke childhood memories of the food his family ate while he
was growing up. Zamora is also passionate about mezcal, whiskey, and local IPAs.
