Tyson Ho is the Pitmaster of the Arrogant Swine, New York’s only BBQ restaurant focused on Carolina whole hog BBQ. There are less than 20 restaurants left in the country still preserving the art of smoking entire pigs over hardwood embers of which one is located in the industrial warehouse district of Bushwick. Tyson and his team sources and splits their own logs and work closely with heritage breed pig farmers in North Carolina that are used for the restaurant. Tyson’s work has been featured nationally on Garden & Gun, Draft, Zagat, Time Out New York, Brooklyn Magazine and many more. His whole hog cooking was showcased on the first season of Michael Symon’s show – “Burgers, Brew & Que” on Food Network.
