Jeff Borofsky, Head Chef and Owner of Skinny Pines, LLC, has a wealth of experience in the kitchen, and is one of Connecticut’s most sought after farm to table wood fired caterers. His passion for use of local ingredients has allowed him to partner with farms and farmers markets throughout Connecticut and New York.

What is your ultimate meal? As long as the food is well sourced I'm happy. Nothing to extravagant. A good bavette steak from Fleisher’s craft Butchery seasoned with my custom spice rub, I'm happy. Add on some sweet potato fries roasted in the oven and it’s a meal. What three things are always in your pantry? Olive oil, red onion, and a well-stocked spice cabinet. If you weren't a chef, what would you be? Probably doing something in the world of land use planning. What’s your favorite NYCWFF memory? Making pizza on the pier will always be a great memory.

Recipe Name:
Jeff’s Steak Spice blend
Recipe Ingredients:
1 TB Sea Salt
1⁄2 teaspoon paprika
1 teaspoon dried herbs of your choice. We like Penzey’s herbs de Provence.
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon coarse
1 teaspoon ground black pepper
Recipe Instructions:
Mix all the ingredients together and liberally apply to the steak of your choice. Allow it to “marinate” for an hour or more then grill.
