Biography

Jeff’s passion for all things food-related was sparked as a young child cooking alongside his mother. He always knew he wanted to be a Chef and got his start as a dishwasher at a small inn in New London NH. As he quickly rose through the ranks the Executive Chef of the Inn took notice mentoring him and encouraging him to attend The Culinary Institute of America.

Jeff went on to work in some of the best restaurants and hotels across the country over the last twenty years. He has spent the last decade in NYC which he now considers home honing his cooking, hospitality, and leadership skills.

Jeff leads all aspects of In Good Company’s culinary operations. He provides support and guidance to the restaurant’s Chefs and their teams. He works closely with local farmers and purveyors to source the highest quality ingredients available to bring delicious, seasonal and interesting takes on the classics both old and new to all In Good Company menus.

Recipe Name:
Smashed Beets with tahini & feta yogurt

Recipe Ingredients:
Smashed Beets with Tahini and Feta Yogurt
Serve with grilled flatbread or Pita and good extra virgin olive oil
3# whole Red Beets
13 Cloves Roasted Garlic in ½ Cup Blended Oil
1/4 cup Tahini
1 Tablespoon toasted Cumin
1 Tablespoon toasted Coriander
½ Tablespoon Aleppo Pepper
3/4 cup Apple Cider Vinegar
Kosher Salt
Freshly ground black pepper
1 cup Extra Virgin Olive Oil
Blended oil for roasting

Recipe Instructions:
Method
” Wash beets. Season with salt and coat with blended oil.
” Individually wrap beets in foil and roast at 350degrees until tender
” Peel Beets and crush by pressing down on them with your hands
” Coarsely chop the beets and garlic in a food processor
” Mix all ingredients together to make a dressing
” Add dressing to the beets to desired level of flavor
” You may need to add a little vinegar and olive oil for adjustments depending on preference
Feta Yogurt
1 cup Greek yogurt
½ cup crème fraiche
½ teaspoon garlic oil
1 cups feta cheese
pinch of salt
Method
” Combine and whip
” Season with salt as needed
