What is your favorite NYC restaurant? And what is your go-to dish? Melba's of Harlem. My favorite dish there is Fried Chicken with candied yams, macaroni and cheese with collard greens.What is your ultimate meal? I actually went to college to become a lawyer until I switched to the culinary route. So I'd definitely be a lawyer if I weren't a chef.If you could cook with anyone, who would that be? My culinary idol is Emeril Lagasse. So I'd say Emeril if it has to be a chef. If it doesn't have to be a chef, I'd love to cook with Denzel Washington just to pick his mind on what his food interests are and learn what he likes to cook.What’s your favorite NYCWFF memory? Meeting fans who flew in and drove from Michigan and North Carolina who told me that they traveled to NYCWFF just to meet me and taste my food. That was such a humbling experience.

Southern Modified Shrimp Cilantro Pasta

 

Ingredients:

1 Cup of Fresh Spinach
1/4 Cup of Le’ Chef Amours Haute Cuisne BBQ Sauce
1 pound penne, Rotini, or preferred pasta
1 pound of Medium Shrimp
1/4 cup chopped yellow onion
1/2 bunch cilantro Minced
1 Tomato Diced
1/3 cup grated parmesan cheese (optional)

 

 

Directions:

In large pot, bring 2 quarts of water to boil Add Spinach and boil until tender about 5 Minutes

Using slotted spoon, remove from pot Set aside

To same pot, add 1 tablespoon of olive oil and boil pasta for 7 Minutes or recommended cook time on box; al dente Remove from pot and set aside

In separate skillet pour Barbecue sauce in bottom to coat add Diced tomatoes, Onions and cilantro Sauté over medium-high heat 3 Minutes

While sauce cooks, add Pasta & spinach Sauté together then add shrimp sauté for 4 Minutes plate and serve.
