Biography

Chef Jimmy Lau was born in Fuqing, a coastal city in Fujian Province, China. The youngest of five, Jimmy could often be found in the kitchen, helping his mother cook. At 18 years old, Jimmy moved to the US and began working in dim sum restaurants in NYC’s Chinatown and then apprenticed at several different sushi restaurants. Chef Jimmy Lau was born in Fuqing, a coastal city in Fujian Province, China. The youngest of five, Jimmy could often be found in the kitchen, helping his mother cook. At 18 years old, Jimmy moved to the US and began working in dim sum restaurants in NYC’s Chinatown and then apprenticed at several different sushi restaurants. After spending some time in NYC, Jimmy took a culinary road trip across America, cooking in various kitchens in various states, learning all different techniques and cuisines from French, Italian, Chinese, and Turkish. In 2004, Jimmy accepted a position at Masa Takayama’s Bar Masa as Head Chef, where he led all creative menu development and coordinated the restaurant’s international fish purchases and inventory. There, he met Chef Nick Kim (then the head Chef at Masa). The two would eventually leave after six years to open Neta, and then Shuko in Union Square.
