Biography

Jimmy Leclerc’s interest in the culinary world began at an early age. As a child he would accompany his father who appreciated fine cuisine and desserts on trips to Paris, where the two would venture the city in search of a new treat to indulge in. These fond memories became the stepping-stone for his career as a pastry chef, igniting Jimmy’s passion for baking. Years later Jimmy obtained his CAP-BEP as a baker at CIFAM. Jimmy Leclerc’s interest in the culinary world began at an early age. As a child he would accompany his father who appreciated fine cuisine and desserts on trips to Paris, where the two would venture the city in search of a new treat to indulge in. These fond memories became the stepping-stone for his career as a pastry chef, igniting Jimmy’s passion for baking. Years later Jimmy obtained his CAP-BEP as a baker at CIFAM. Continuing his education, he obtained his CAP while studying at Pastry Chatellier in La Baule, France. Jimmy then embarked on a series of residencies that carried him through Spain and South American countries, forging his classic training with the new flavors and recipes from his travels. In 2007 Jimmy accepted a position as a chef at Ladurée Paris, returning to his favorite patisserie from his childhood. Living out this dream, he traveled across Ladurée locations in the Middle East and Asia. In 2015 Jimmy began as the Executive Pastry Chef for the opening of the first Ladurée in the US. Today, Jimmy continues his passion for baking, revisiting fond childhood memories of Ladurée which he now gets to call home.
