Hi! I’m Joe Musngi and I’m an accountant by day and smoked meat aficionado by night. I started SmoKING of meats in the midst of the pandemic after I fell in love with woodfire cooking when I smoked my first brisket for extended family Father’s Day 2020. With family being from Pampanga, cooking has always been part of my life and I now do my best to use American BBQ as a vessel to highlight the wonderful flavors of my Filipino culture. Some of you had a glimpse of that if you were at the 2021 Backyard BBQ event when I served the Kingpin(oy), my Filipino pork belly burnt ends with jasmine rice and mac salad.
Since inception late 2020, the operation has grown from serving dozens a week with a backyard smoker, to hundreds at Smorgasburg Jersey City with my 600 gallon offset. Most recently we took home the 2022 NYC Brisket King title over at Pig Beach in Brooklyn NY, and we hope to continue with the momentum by opening a brick and mortar some time in the near future.
