Over the years, the love that has been poured into Penelope like a glittery overspill has been returned in so many different ways. From our staff members who have come and stayed (and stayed) that have added so much sparkle to our fabric, to the neighborhood that has always been supportive and generous with so many regulars we know by name. We are humble and grateful that the sun is still shining on Penelope after 15 strong years!

What is your favorite NYC restaurant? And what is your go-to dish? Believe it or not I don’t really have a single favorite NYC restaurant. My wife and I make it a point to eat somewhere new each week, whether it be Michelin starred or a 5' x 10' literal hole in the wall with one woman cooking from the heart. We always order a few different items off the menu. Then again, nothing says "home" like a nice warm bagel from Main Street Bagels in Flushing. What is your ultimate meal? Any delicious meal shared with loved ones. My ultimate meal so far in life was the rehearsal dinner for our wedding. Our closest friends and family cracking crab shells together on the beach. What three things are always in your pantry? I always have kosher salt, many heads of garlic, and low sodium soy sauce in my pantry. If you weren't a chef, what would you be? If wasn’t a Chef, I would be a detective/FBI agent or a photographer. If you could cook with anyone, who would that be? If I had the chance to cook with anyone I would want to be in the kitchen with my grandmother and two great grandmothers all at the same time. I can’t imagine a better moment in the kitchen. What’s your favorite NYCWFF memory? My favorite NYCWFF memory is when my wife surprised me with all access tickets for my 30th birthday followed by an amazing dinner at Degustation. It was an amazing day.

Penny’s Pizza Bagels

Ingredients:

Mini bagel half

Béchamel

Pesto

Chicken meatball

Melted cheese

Arugula

Directions:

All the thrills with no frills. Load that mini bagel half with the good good… béchamel, pesto, some mini mini chicken meatballs, a creamy nutty melty cheese… and toast that sucker during a Clarissa Explains It All commercial break. Finish with a little arugula and snack away.
