Growing up in a Jewish home in North Carolina, Madeline (Maddie) Sperling learned to cook while spending time in the kitchen with her mother. From weekend trips to Jerusalem Market in Greensboro, to preparing big family dinners, Maddie always had an affinity for food. During her time at UNC Chapel Hill, Maddie secured her first job in a restaurant working front of house, but immediately became infatuated with the food and kitchen, and eventually joined the back of house team on the salad station. After honing in on her knife skills and gaining professional kitchen experience, Maddie began working at the beloved Fearrington House in Chapel Hill, where she learned to thrive in a fast-paced environment, and it was here that she committed to the chef career long term. After deciding to move to New York City in 2015 to further her career, Maddie started working at Gramercy Tavern shortly after, where she touched all stations, eventually working her way up to Tournant. In 2017 Maddie was ready for a change and started at The NoMad, where she excelled and was promoted to Chef de Cuisine. Maddie is now Executive Chef at Zou Zou’s, where she is joined in the kitchen by Chef de Cuisine Juliana Latif, whom she met during her time at The NoMad. Maddie’s menu celebrates the Eastern Mediterranean region, bringing inspiration from Lebanon, Israel, Turkey, Egypt, Syria, and Jordan, among others.
