Chef Manuel Trevino always knew his true passion was in the kitchen. Trevino grew up in the border town of Laredo, TX, which served as the foundation for much of his inspiration and passion for Mexican cuisine throughout his career. Trevino graduated from St. Mary’s University with a degree in business. Following graduation, Trevino enrolled in culinary school at the New England Culinary Institute (NECI) in Montpelier, VT.
Trevino’s expertise has been well recognized over the years. In 2008, he appeared on season 4 of Bravo’s hit television competition series, Top Chef. He has also won several accolades, including Adam Platt’s 2010 “Where to Eat” list for New York Magazine, and was awarded three stars from Time Out New York while working at Travertine. Moreover, in 2012, he won New York City Wine & Food Festival’s “Sandwich Showdown.”
Currently, Trevino serves as the Vice President of Culinary for Rosa Mexicano, a restaurant group offering a fresh take on authentic Mexican cuisine, serving beloved classics and sophisticated dishes. Since joining the team, he has created an entirely new menu featuring signature dishes, cocktails, and perfectly crafted shared plates. When creating the new menu, Trevino drew inspiration from his childhood, surrounded by unfussy yet delicious Mexican cuisine. Trevino’s unique background and 30 years of expertise in the industry inform the simplicity and authenticity he brings to Rosa Mexicano.
