MARK LADNER is the founder of Pasta Flyer. He served as the executive chef of Del Posto in New York City, which he opened in 2005. The restaurant received a four-star rating from the New York Times in 2010, and was more recently honored with a Michelin star and a Relais & Châteaux Grand Chef distinction. Mark cooks a sensible interpretation of modern and regional cuisines, which he calls “Cucina New Yorkese.” He recently released The Del Posto Cookbook (Grand Central, November 2016).
