Coming from a family that operated a wide range of businesses from Korean eateries to a gourmet cheese shop to a fish market, New York-native Michael Sim grew up no stranger to the food and beverage industry. However, it wasn’t until he enrolled in a summer cooking course at the New School after high school that he realized his passion for food and his calling to become a chef. After completing his formal culinary education at CIA, Michael served as a chef/cook at some of the most challenging and prestigious kitchens in New York City’s fine dining scene (Jean Georges’ Spice Market, En Japanese Brasserie, Ramsay, Masa) and was appointed as the Executive Chef of Toku at the American Manhasset in Long Island
