California Crab

 

Ingredients:

1 Cup (240 ml) Olive Oil
5 Cloves Garlic, Minced
1/2 Cup (120 ml) Apple Cider Vinegar
1 Teaspoon Salt
1 Teaspoon Granulated Sugar
1/2 Teaspoon Ground Black Pepper
1/2 Teaspoon Hot Pepper Sauce
Zest and Juice of 1 Lemon
1/4 Cup (13 g) Chopped Fresh Flat-Leaf Parsley
4 Pounds (1.8 kg) Cooked and Cracked Dungeness Crab
Potato Chips, Sourdough Bread, or Rustic Loaf, for serving

 

Directions:

Heat olive oil over medium heat and add garlic. Sauté for 2 minutes or until fragrant. Remove from heat and let cool completely. Add vinegar, salt, sugar, pepper, hot pepper sauce, lemon zest and juice, and parsley and stir well to combine. Gently fold in crab and let marinate in the refrigerator for 3 hours. Serve on a large platter alongside potato chips or bread.
