Originally from Libertyville, Illinois, Nelson’s first food memories involve planting her own vegetables and pickling fresh cucumbers from her family’s home garden. Nelson’s admiration of food brought her to The University of Illinois, where she studied Food Science and Human Nutrition. Though she was initially interested in the ways that food affected diseases, Nelson eventually became more inspired by her time in the kitchen. Originally from Libertyville, Illinois, Nelson’s first food memories involve planting her own vegetables and pickling fresh cucumbers from her family’s home garden. Nelson’s admiration of food brought her to The University of Illinois, where she studied Food Science and Human Nutrition. Though she was initially interested in the ways that food affected diseases, Nelson eventually became more inspired by her time in the kitchen. After graduating she moved to London and spent time traveling throughout Europe, expanding her passion and exposure to a diversity of food cultures. Upon her return to the U.S., Nelson enrolled at the Cooking Hospitality Institute of Chicago.

Cutting her teeth as ‘Garde Manger’ at Meritage in Chicago, Nelson worked her way up to sous chef and eventually opened its sister restaurant, Fixture, as Head Chef. Fast-forward 6 years, a move to New York City landed Nelson a dream role as Executive Chef of Celebrity Chef Chris Santos’ restaurant, Beauty & Essex, and VANDAL, as well. Ever since teaming up with Chef Santos, Nelson has never looked back.
