Biography

Chef Nick Kim was born in Los Angeles to Korean immigrant parents. As a child, Nick traveled to Japan often with his mother and began to develop an interest in Japanese culture and food. After graduating the Culinary Institute of America, Nick took a position at Michelle’s in Hawaii, where he worked under the tutelage of Chef Ian Russo. Chef Nick Kim was born in Los Angeles to Korean immigrant parents. As a child, Nick traveled to Japan often with his mother and began to develop an interest in Japanese culture and food. After graduating the Culinary Institute of America, Nick took a position at Michelle’s in Hawaii, where he worked under the tutelage of Chef Ian Russo. From there, Nick worked under acclaimed chefs including Ludovic Lefebvre (L’Orangerie) and Masa Takayama (Ginza Sushi-Ko). After two years working for chef Takayama, he headed to New York to help open Masa in Columbus Circle. Over the course of his tenure there, the restaurant received numerous accolades including three Michelin stars and a four-star review from the New York Times. While at Masa, Nick met his business partner Jimmy Lau (who was then the head chef of Bar Masa). The pair left to open Neta, Shuko Beach in East Hampton, and then Shuko in Union Square. At Shuko, Nick blends his classic French training with his love of Japanese cooking to deliver a truly unique omakase and kaiseki experience.
