Bobolink Dairy and Bakehouse was founded by Jonathan and Nina White in 2002, on leased farmland. We purchased a 186 acre farmstead in Milford, NJ in March of 2010, and moved our family, herd and business to Milford in June 2010.

Bobolink Dairy and Bakehouse was founded by Jonathan and Nina White in 2002, on leased farmland. We purchased a 186 acre farmstead in Milford, NJ in March of 2010, and moved our family, herd and business to Milford in June 2010.

The Bobolink is a ground-nesting bird that relies on undisturbed grasslands for its reproduction. As such, they are compatible with pastured animals, but cannot tolerate tilled cropland. Once as common as the robin, they are now severely limited across their entire range.

By naming our business for this creature, we hope to increase public awareness about how important it is for agriculture to respect and nurture wildlife.

In the 2017 season, we’ll be milking approximately 50 cows, and we have a bumper crop of young heifers and bulls of our new breed, the Bobolink Blacks, which are the result of crossing several common “modern” dairy breeds (Ayrshire, Guernsey, Jersey, etc.) with the ancient Kerry cattle of Ireland.

Our Bakehouse creates breads and pastries that are made with heritage and heirloom grains, risen slowly for maximum flavor and nutrition. We are grateful to artisan grain growers, who provide us with top quality raw materials to bake in our wood-fired oven!

What is your favorite NYC restaurant? And what is your go-to dish? The Olive tree Cafe on MacDougal Street, because we met there! Unfortunately, they changed the menu away from the Mid-Eastern offerings, so now we go to Mamoun's for the schwarma! What is your ultimate meal? Our ultimate meal is cooking whatever we just foraged, and enjoying it with good friends. What three things are always in your pantry? Garlic, Onions, and Candy Cap Mushroom If you weren't a chef, what would you be? A little more about us...we have been a lot of things already! Nina and Jonathan White founded and run Bobolink Dairy & Bakehouse, a regenerative farming business located in Hunterdon County, NJ. Bobolink makes and sells 100% grass-fed raw cow's milk cheeses, wood-fired breads made with carefully selected organic grains, pastured meats, and house-made charcuterie. As the parents of 3 children on the autistic spectrum, Nina and Jonathan have been educating, advocating, and innovating for many years. When their youngest son, Jacob, was diagnosed with autism, the whole family got started on a home-ABA program under Nina’s direction. In addition to their extensive farming experience, they are both adept at computer technologies, with Jonathan having been a computer engineer well before most folks had even heard of a personal computer. Jonathan has worked in diverse fields such as robotics, medical devices, communications, media, and finance. Nina earned a BFA in Dance at NYU’s Tisch School of the Arts after early studies at the Joffrey Ballet School. Nina also studied as a full merit scholarship student at the Alvin Ailey School. Nina has taught dance extensively to people of all ages and abilities. Nina is also an accomplished seamstress, knitter, embroiderer, and has dabbled in weaving and needlepoint.
