Chef/Owner Peter Botros has been in the food service since he was thirteen. Peter has worked in all areas of the restaurant and catering industry. His passion for food and service has led him to realize his dream, The Stone House at Clove Lakes!
Peter Botros is the Chef/Owner of several distinguished restaurants on Staten Island. He appeared on Guy’s Grocery Games in October 2017 and is a self-taught chef who found a passion for food at an early age. He holds a Bachelor’s of Arts in Entrepreneurial Studies from Fairleigh Dickinson University with a double major in marketing and finance. Being in the food industry since he was thirteen years old and having a passion for developing new flavor combinations, prompted Chef Botros to open The Stone House in 2014. The popular spot offers fine dining inside a quaint rustic house located over a picturesque walking bridge in Clove Lakes Park. Chef’s Loft at The Stone House offers an intimate 16-20 seat dining experience with a tasting menu prepared exclusively by Chef Botros. In 2017, Chef Botros celebrated the grand opening of Violette’s Cellar in Grant City. Violette’s Cellar offers a unique dining atmosphere with unique dining experiences to match, including a 7 day a week brunch menu, as well a dinner menu made for sharing. A year later Corner House BBQ was opened. Corner House BBQ features traditional smoke house fare as well as twists on classic southern dishes.
In February 2018, Peter was selected to cook at the prestigious James Beard House, a great honor in the professional food world. He is among the very few chefs from Staten Island ever invited to prepare a dinner in the legendary kitchen. Since then Peter and the team, have not only been invited back but have hosted several James Beard Foundation events at multiple locations.
In January 2019, Sofia’s Taqueria was born. Sofia’s features three floors and an outdoor courtyard of carefully curated furniture and decor that create the perfect mix of authentic ambiance, playful sophistication, and an energetic vibe. Featuring gourmet food, hand crafted cocktails, and over 120 tequilas and mezcals. Because of Sofia’s wildly successful opening the brand extended into a mall kiosk venture, Sofia’s Guac Bar. Sofia’s Guac Bar features six signature guacamoles, hand crafted empanadas, and a build your own guacamole bar.
In June 2020, mid pandemic, he opened Rustic Pizza & Pasteria. An artisan pizzeria that features homemade pastas, gourmet Italian specialties and hand crafted pizza. The location is designed to service high volume take-out and delivery. However, it does feature limited café style seating.
In September 2020, Peter’s newest concept opened, Sally’s Southern. Sally’s Southern features traditional southern comfort foods with creative culinary flare and craft cocktails drawing inspiration from classical southern indulgences. Sally’s Southern namesake is in homage to Peter’s partner, Philip Farinacci’s mother Sally Curtis, who recently lost her battle with cancer.
