Biography

On February 8, 2016, on the beginning of the annual Chinese New Year festivities, Chefs Victor Huang and Peter Tondreau opened up a 90-square feet noodle stall inside the Chelsea Market. They called it Very Fresh Noodles, following the lexicon guidelines of a good restaurant name in Chinatown. They now operate out of a marginally bigger kiosk, but to the same tune of fresh “biangbiang” noodles slapped out on a table, a la minute to the pace of never-ending order tickets.
