Chef Robert Hartman serves as the Chef de Cuisine at Saint Theo’s. A passionate chef and leader, Hartman oversees the restaurant’s Venetian culinary direction, recipe development and operations. Chef Robert received his culinary education from the Culinary Institute of America and has worked at award-winning restaurants around the world including Eleven Madison Park, El Celler de Can Roca, La Calenda, and Saison. Prior to joining Saint Theo’s, Hartman worked as a private chef, utilizing his client’s own farm to grow and serve fresh produce to create tailored programs that were healthy without compromising flavors. He highly values the use of quality ingredients in his cooking, including using produce at its peak and only sourcing sustainably and properly raised meat. Chef Robert also believes that every dish should have a thoughtful purpose behind its creation and he is excited to bring these values to his role at Saint Theo’s.
