Deegan has always had a passion for hospitality. Before joining Sadelle’s, he was the Cehf de Cuisine at Danji and Uchi, and before this was the Sous chef at Ma Peche. Deegan lives with his wife, who he married in January of this year.

What is your favorite NYC restaurant? And what is your go-to dish? This is always a really tough question, it all depends on what have a craving for at the moment but Somtum Der is high on my list. My Go-to is always the catfish larb, very bright, clean and spicy. What is your ultimate meal? The Catfish Larb ant Somtun Der is just about it! With a cold beer and a few other entrees it can't be beat. What three things are always in your pantry? Good salt, cumin, and lard. If you weren't a chef, what would you be? Probably a Marine Biologist, fisherman or oyster farmer…something on the water. If you could cook with anyone, who would that be? IF we are talking anyone in history it would probably be Jaques Cousteau, he had such a profound effect on my life when I was a kid, watching his show as and reading his books.
