Hummingbird Cake

 

Ingredients:

3 cups self rising flour
2 tsp cinnamon
1 tsp ginger
1/2 cup white sugar
1 cup dark brown sugar
1 cup vegetable oil
2 tsp pure vanilla (for cake)
1 tsp vanilla (for frosting)
Few tsp milk (for frosting)
1 cup crushed pineapples in juice
4 very ripe bananas (mashed)
3 large eggs (room temp)
3 cups powdered sugar
8oz cream cheese (room temp)
1 stick salted butter (room temp)

 

Directions:

Preheat oven to 350 degrees

Prepare 2 (9) inch cake pans (nonstick cooking spray and a little flour)

Combine all dry ingredients in a bowl

Combine all wet ingredients

Mix wet with dry ingredients just until ingredients are combined – PLEASE DONT OVER MIX!

Divide batter evenly into the cake pans

Bake for 30-35 minutes .. wait until at least 30 minutes before checking the cake

Once cake is done, remove from oven to cool. After about 10 minutes, carefully remove from the cake pan and place on a cooling rack.

For Frosting:
Mix softened butter & cream cheese until creamy

Add vanilla

Slowly mix in powdered sugar one cup at a time

If frosting is very thick, add milk one tsp at a time

Once cake is complete cooled (at least an hour), frost and enjoy!
