Simone Tong is the chef-owner of Little Tong Noodle Shop. She was born in Chengdu, China, and grew up in Singapore and Macao. She worked at wd~50 and 15 East before traveling through China and then opening Little Tong in March 2017, which features mixian noodle bowls from the Yunnan province.

What is your favorite NYC restaurant? And what is your go-to dish? It's impossible to pick one. New York offers so, so much diversity. Depending on my mood, the weather, and just what's seasonal, my go-to changes. On the weekends I crave oysters at Upstate in the East Village. I go to Raku for Udon, En Brasserie for the variety of Japanese food it provides, Superiority Burger for the flavor bomb vegetarian, Desnuda for ceviche, Yogee on Chrystie for the best down-home Hong Kong style noodle soups. What is your ultimate meal? Hot pot. What three things are always in your pantry? Prosciutto, eggs, and chili oil. If you weren't a chef, what would you be? An architect. If you could cook with anyone, who would that be? I'd cook with with my paternal grandparents to learn some classic Chinese dishes from them. My grandmother is a wonderful Shanghainese home cook, and I learned from my dad that my grandfather was a foodie when he was working in Shanghai for an American petroleum company. What’s your favorite NYCWFF memory? I'll never forget the time that one patron of the Rooftop Iron Chef Showdown kept coming back for seconds, and thirds, and fourths, and every time he'd come back with a new voting token to put into our ballot box — where he got all those extra tokens, we have no idea, but we loved that he was rooting for us and was into stuffing our box!
