Chef Freddy is a born and raised New Yorker, originally from Staten Island which sparked his love of Italian food and cooking. His nationality is Ecuadorian and he grew up eating dishes prepared by his father and family that melded Latin cuisine with the Italian food that surrounded his home, namely a braised short-rib pasta dish that he still cooks for himself and his family to this day.
In order to stand out from within the New York dining scene, the F&B direction on levels three and four takes on a point of view that encompasses both authenticity and storytelling – largely derived from the life, experience, and personality of Chef Freddy Vargas. Uniquely New York Italian cooking meets pan-Latin roots, with an emphasis on Ecuadorian dishes and ingredients. Passion for a from-scratch way of cooking that’s rooted in both Italian and Ecuadorian cuisines comes through via housemade dishes such as pastas and charcuterie, as well as surprising dishes like Ecuadorian fried rice.
