Will Horowitz is the executive chef and owner of East Village staples, Ducks Eatery and Harry and Ida’s Meat & Supply Co., with his sister and co-founder, Julie. Will Horowitz is the executive chef and owner of East Village staples, Ducks Eatery and Harry and Ida’s Meat & Supply Co., with his sister and co-founder, Julie. They specialize in pre-industrialized heritage techniques and use ingredients from all over the world with a strong focus on smoked, cured and fermented foods. Their New York culinary roots run deep, with family on both sides in the food industry. Their maternal grandparents were a classically trained French chef and a local fisherman who, together, specialized in seasonal seafood and produce from Long Island’s North Fork. Their paternal great-grandparents, Harry & Ida, ran a traditional Kosher Delicatessen in Harlem, after immigrating from Hungary. He is a believer in utilizing local terroir as resource and inspiration. He is an avid forager, and naturalist and implements these techniques and beliefs into his everyday cooking process.
