DESCRIPTION

Eric Huang single-handedly caused quite a stir in the New York dining scene when, in 2020, he began cooking Asian-accented fried chicken at his uncle’s Chinese restaurant deep in Queens. Hungry food-loving New Yorkers from all boroughs made the trek to bite into his extra-crispy chicken with a spicy kick thanks to Sichuan peppercorns and Tianjin chilies.

Since then, he’s opened his own spot, Pecking House in Park Slope, Brooklyn, that has been hugely popular since he first fired up his chicken-frying burners in 2022. Chef Huang’s solo success is no fluke: he spent a decade in the Michelin-starred kitchens of Eleven Madison Park, Gramercy Tavern, and Café Boulud, honing his skills.

At this hands-on master class at the Institute of Culinary Education (ICE), you’ll watch Chef Huang in action as he teaches how to know your way around a chicken and coax all the flavor from it.
