Gautier Coiffard

Gautier Coiffard, originally from Grenoble in southeast France, is the co-owner of the successful bakery L’Appartement 4F in Brooklyn, New York, which he runs with his wife, Ashley Coiffard. Before starting the bakery, Gautier was a software engineer and began making authentic French croissants out of a craving for a taste of home.

The couple started their venture in their apartment (which inspired the bakery’s name), initially baking for friends. The quality of the pastries gradually drew wider attention. Gautier’s dedication to quality is reflected in his insistence on using French ingredients in his pastries, believing it significantly contributes to their taste.

In 2021, they expanded the business to a storefront in the Brooklyn Heights neighborhood. The store emulates the atmosphere of a French patisserie with its vintage furniture and floor-to-ceiling windows. Despite the challenges and hard work, L’Appartement 4F has been embraced by the local community, often selling out its daily offerings of baked goods. Today, while Gautier focuses on the bakery, Ashley balances her nursing career with managing the bakery’s marketing and social media.
