Hami Kim is the Director of R&D at Paris Baguette, where she blends innovation and nostalgia to create pastries and baked goods that resonate with today’s guests. With a background in cake decorating at several New York City bakeries and formal training from the French Culinary Institute in Pastry Arts, Hami’s journey is rooted in both classic technique and hands-on creativity.
Raised in New Jersey with Korean heritage, food was always a source of connection and joy — from family celebrations to church gatherings. That early exposure to the cultural and emotional power of food shaped her approach today: to develop products that feel familiar, but with a thoughtful, elevated twist.
At Paris Baguette, Hami leads the development of seasonal menus and product innovation across the brand’s growing North American footprint. She works closely with a team of chefs, collaborating from concept to final product to ensure each item meets the highest standards of creativity and quality. Her work draws inspiration from her travels and café visits, where she explores flavors, textures, and design cues that translate into accessible, memorable bakery experiences.
