Jonathan Barragán is a Mexican-American chef and the Executive Chef at Ánimo! in Midtown NYC. He began his culinary journey from the ground up starting as a teenager working at McDonald’s and steadily rising through the ranks, driven by relentless hands-on experience, self-study, and practice. At 18, he stepped into his first real kitchen in Times Square, which marked the true beginning of his professional culinary career. Over the years, Jonathan has worked in a variety of high-volume, high-standard kitchens, including Virgil’s Real BBQ, Rocco’s Tacos, British Airways First and Business Class, and Tacombi, His expertise spans authentic Mexican cuisine, taqueria-style fare, and American BBQ all made from scratch and rooted in bold, traditional flavors. Jonathan is passionate about building and leading teams that share his love for food and dedication to execution. His leadership style is focused on mentorship, motivation, and creating a kitchen culture grounded in respect, excellence, and shared vision.
