heritage through a contemporary lens. Lika Arce, owner and creative partner, with a background in architecture, art and hospitality, leads the restaurant’s culinary vision. The daughter of a master winemaker and influenced by generations of women who carried Georgia’s culinary
spirit forward, she draws on a deeply personal heritage and an instinctive understanding of flavors shaped by warm memories of lingering aromas from Kakhetian vineyards to the sunlit Black Sea.
Chef Dimitri Gabiskiria leads Chito Gvrito’s kitchen with deep respect for Georgia’s culinary traditions and a distinctly modern sensibility. With family roots in Abkhazia and mastering the craft in Tbilisi, he refined his leadership skills across Europe, Asia and America. Lovingly known as the King of Khinkali, he has handcrafted more than one million of Georgia’s iconic dumplings around the world, sharing his love of tradition and dedication to the craft. Together, the Chito Gvrito team and Chef Dimitri bridge culture, gastronomy and history to create an experience that lives between tradition and emotion.
