Mario Emilio Vitolo is a second-generation chef restaurateur and the driving force behind Emilio’s Ballato, one of New York’s most storied Italian restaurants. Acquired by his father, Emilio Vitolo Sr., in the early 1980s, Ballato’s is known for its timeless charm, soulful cooking, and a clientele that ranges from loyal locals to U.S. presidents.
Mario began working in the restaurant at age 10. As the eldest Vitolo brother, he quickly became a steady presence—learning the rhythm of the kitchen and the nuance of hospitality under his father’s old-school mentorship. He crafted tomato sauce, led the dessert program, perfected tagliatelle, cooked traditional seafood, and became known for the restaurant’s beloved chicken parm. Out front, he remains the soul of the room: greeting guests with presence, remembering their stories, and setting the tone for unforgettable evenings. What sets Mario apart is not just skill—it’s style. His hospitality is magnetic, deeply personal, and rooted in a timeless Italian ethos: make people feel seen, fed, and celebrated. His work isn’t performance—it’s ritual.
He honed his craft under legendary restaurateur Dickie Brennan in New Orleans and refined his vision through immersive experiences across Europe, Australia, and
Japan. These global influences sharpened his technique, but his foundation has always remained in the legacy of Ballato’s.
Today, Mario also serves as Chef and Director of Hospitality at Vitolo in Fort Lauderdale, an elevated Italian concept he runs with his youngest brother. Through decades of dedication, Mario has helped shape Ballato’s into a New York institution—built on flavor, feeling, and the kind of hospitality that never goes out of
style.
