Founded in 1993, Mario Laufer identified the need for nutritious cuisine in Miami Beach and aimed to introduce a new wave of wellness and flavors to the city. Despite several unsuccessful ventures across different industries, the Cuban native found solace in the kitchen, drawing inspiration from his mother’s recipes. Laufer pursued his passion for cooking and healthy living by opening the first Carrot Express in a gas station on Alton Road. Following significant community support, he established a second location in Midtown, marking the beginning of Carrot Express’s expansion in South Florida. The brand is heading towards 30 locations, including spots in South Florida and NYC.
Mario’s journey involved overcoming numerous challenges, including shutting down his women’s clothing manufacturing business and navigating the competitive restaurant industry. His motivation originates from a personal commitment to healthy living and maintaining a predominantly pescatarian diet. Carrot Express is renowned for its dedication to clean eating, and the wholesome, family-operated business has firmly rooted itself in South Florida and NYC as a preferred choice for individuals seeking a healthier dining experience without compromising on taste or convenience.
