Paul D’Avino is the chef and owner of Cafe Mars, “an unusual Italian restaurant,” based in Gowanus, Brooklyn. Cafe Mars has been recognized by the Michelin Guide with a Bib Gourmand (2023/24), Best Service NYC (2023), and an OpenTable icon, amongst other accolades.

Prior to opening Café Mars, Paul has had the pleasure of cooking at wd~50 (NYC), Cochon (New Orleans), aska (Brooklyn), Matur og Drykkur (Reykjavik) and others. He graduated from the New England Culinary Institute in Vermont.
