A graduate of the International Culinary Center, Chef Spencer Miles brings over a decade of experience in New York’s restaurant scene. His cooking style celebrates fresh, locally sourced ingredients and global techniques, shaped by years of travel and hands- on learning.
Spencer has cooked at the acclaimed Beauty & Essex, where he embraced a bold, globally inspired menu, and later deepened his expertise in Italian cuisine and wood-fired pizza while working alongside Christian Petroni at Fortina. Most recently, he led the kitchen at Wheated, one of Brooklyn’s stand out pizzerias, known for its signature sourdough crust.
Now Executive Chef at Sound + Fury, a brewery and kitchen in the heart of Brooklyn, Spencer’s menu reflects both personal history, culinary curiosity, and his deep love for pizza. Known for creating inventive yet approachable dishes, he focuses on flavor-forward experiences that connect people through food.
